Let’s talk healthy snacking. If there is one thing that can derail the “clean eating train” it is the urge to snack. We have all been there…it’s 2:30 pm and the grilled chicken salad you had for lunch had worn off. You need a boost to get you through until dinner but snacking healthy is a struggle. Well here is a simple recipe that comes in clutch in these situations. It has protein and healthy fats that will help tide you over until the dinner bell rings.
Spicy Avocado Hummus
1 can Garbanzo Beans (Chickpeas)
1 to 2 jalapenos
Extra Virgin Olive Oil
Salt and pepper
I use my Nutribullet to blend the hummus to desired consistency but any blender or food processor will do. You start by draining and rinsing the garbanzo beans and pour into blender. Next add 1 half of your avocado to the blender. The other half of avocado is yours to do what you wish with. I rub the lemon on the unused half and store it to eat later. Half the lemon and squeeze the juice from each half into the blender. Then add about 1 tablespoon EVOO to the blender. Now the rest of the recipe is according to personal taste, you can add as much jalapeno, salt and pepper, and garlic as you would like. I suggest start by adding a little and adjusting accordingly. I serve mine with carrot chips and bell peppers.
Tip – Add extra olive oil or a little water to achieve desired consistency.
